The bamboo root is considered the "best" vegetable in China because it is nutritious, tasty and healthy.

The tender root contains high protein and is low in fat. The abundant cellulose in bamboo roots is helpful in keeping the gastric and intestinal system healthy.

Research shows that bamboo roots can protect one from rectal cancer, cardiovascular diseases and others related to the digestive system. It's also helpful in losing weight.

According to records of traditional Chinese medicines, bamboo roots can cool the heat in the liver. It may also cure insomnia.

Bamboo root can be cooked with other food such as pork and fish soup.
