Italian Parmigiano Reggiano, also known as the "king of cheeses", is one of the most exported food products in the world.
Produced in Northern Italy, the unique taste of the cheese is the result of a traditional production process which dates back eight centuries. A single wheel of cheese is produced using over 500 liters of high quality raw milk.
Italy's Parmigiano-Reggiano is one of the most famous cheeses in the world, and one of the countries' most renowned and unique food products. A wheel of the celebrated cheese isn't cheap. But its ability to transform the flavor of many dishes has made it a popular cheese for eight hundred years.
Exclusively produced in the area surrounding Parma, Reggio Emilia, Modena, Bologna and Mantua, the cheese has been made according to the same recipe since the thirteenth century.
Luca Caiti, cheese-master, said, "You need a strong passion for this job because we are working even at Christmas. You can recognize a great cheese-master from his ability to follow the process of milk transformation."
